Ceviche


noun: South American dish of raw white fish or shellfish, marinated and effectively 'cooked' in lemon or lime juice - the citric acid in the juices breaks down the fish and after a few hours it will eventually become opaque like ordinary cooked fish. Preparation involves the fish, juice, salt, ground black pepper, finely minced onions, cilantro and finely minced peppers. Served as an appetizer, a salad, or a wrap filling.
